A year ago we thought we would develop some standard map projections in LAS as an output option but that still hasn't happened and is unlikely to happen in the near future. What is needed is for someone to create some new LAS visualization scripts for Ferret (the back end visualization tool) that generate map projection output. Ferret certainly has the capability to do a wide variety of map projections.
Here's what would be required for you to implement this on your server. It requires a working knowledge of Ferret and some dabbling with the template syntax we're using.

Sorry I can't offer you a pat solution. We have too many requests
for new functionality and not enough programmers at the moment.
