Hi Todd,
You can specify the types of products available per dataset or variable 
by configuring 'ops' type  menus in  ui.xml.  You can create your own UI 
configuration and configure the dataset to use it following the 
instructions at: http://ferret.pmel.noaa.gov/LASdoc/serve/cache/50.html
