The FERRET user's guide says:

*** 5.1  Reading ASCII files ***
.....
(Ferret provides the /DEPTH qualifier to explicitly designate axes
where the vertical axis convention is reversed).
.....

You may try 
yes? DEFINE AXIS/Z=0:1000:100/UNIT=meters/DEPTH salz
