Hi -
The topics to look at are "modulo regridding", to create a "monthly climatology", and "anomaly", subtracting the climatology from the data to form the anomaly.  There is an FAQ's that will show you how to do what you need to do.

How do I calculate climatologies and climatological anomalies?
