How to define axis for data in Gauss irregular grid?



Dear Ferreters,

I have several questions shown as below:
 
1) I have a skin temperature data set , and in Gauss grid, that's grid in the meridional direction is irregular. Like the following grid:

My question is How to define the axis and grid in Y direction ?
 
 
2) I found the map I draw is in the shape of ladder, but not continuous and smoothing. Is that relative to the resolution of the above data? If yes, How should I settle it?
