How to redefine this grid?

Dear ferreters,

Seems to be a simple question, but i don't know how
to do.
My model data in netcdf is from 73.75S to 97.25 N. So
if i contour them, i can not see the whole region.
How can i convert them to 90s:90n?

Btw, if there is no data in some region, like, data ends
at 70s, how can i see the whole region?
