controlling the number scale on the color key

Using  'Levels=', I can move my color scale around for a fill plot.
However I would like to make my scale go from '+X' to  '-X' with '0' in
the middle. I've gotten it close, but it just misses. Is there a command
to directely control the lable increments for the color key?
