We designed the interface to always show those buttons, but only activate them when that operation is available because we wanted users to always be able to see what's possible even if the particular data set did not allow that operation.

So if you eliminate the operations of the category "table" with the string "value" in the name from the operationsV7.xml file the show values will never be activated for gridded data. Similarly for the category containing "correlation" for the correlation viewer and "file" for the export to desktop.

If you want to remove the buttons entirely, then you'll have to edit the source for gov.noaa.pmel.tmap.las.client.laswidget.OperationsMenu and recompile the client using the GWT_compile script in LAS_HOME directory and then redeploy.
